Aging

The barrel cellar is almost underground to keep the temperature and humidity constant. We have 400 French oak barrels and 500 American oak barrels.

The wine ages during 12-15 months for the Crianza, and 16-18 months for the Reserva. During this time we rack the barrels several times to clear the wine, because we don't fine, stabilize or filter it later.

Once the aging in barrel finish, we blend and bottle the wines. We keep the bottles in the resting-room in metal crates, until the optimal moment to release the wine to the market.
